Really good "Southern Comfort Cake"

This rocks. I don't make it often, but it's moist and tasty.

Southern Comfort Cake

3 1/2 ounce instant vanilla pudding mix
yellow cake mix
4 eggs
1/2 cup cold water
1/2 cup oil
1 cup chopped nuts
1/2 cup southern comfort( or another liquor you like...but southern comfort is sweet, haven't tried bourbon or JD.)

Add all to a large mixing bowl and beat for 2 minutes on medium speed. Pour into a greased and floured pan. Bake for 1 hour at 325 degrees. Cool for a few minutes and invert onto plate. Prick the top with a toothpick or fork to make small holes. Brush the sides and top with the glaze( recipe below) Cool completely reheat glaze and brush again. Remember alcohol boils off at 180 so this isn't as bad as you might think.

Glaze
1/4 cup butter
1/8 cup water
1/2 cup sugar
1/2 cup southern comfort
Melt butter. Stir in water and sugar. Boil for 3 min. REMOVE FROM HEAT and add southern comfort.

    If you ever cook with Southern Comfort, you will learn is is basically alcoholic caramel. Using it to make things like cake is right up its ally.
    Unless life also hands you water and sugar, your lemonade is gonna suck!
