Leftover beef DOES suck. It sucks even more than leftover turkey. Which is a great accomplishment. Because leftover turkey BLOWS. I enjoy turkey breast, IMMEDIATELY out of the oven. I'll eat my fill while all carving it. Once it's carved, it goes down hill fast.

I am sure the leftover beef is good that way, but it sucks rewarmed. Obviously you got to use it the right way. Reheating a piece of steak or roast and eating it is not the correct way.
And yes... Rest your turkeys folks! 30 minutes at least. 45 minutes is even better.

Are you two on DRUGS!!!!!!!! I take leftover rare grilled steak cold out of the fridge, slice it super thin with a Japanese knife across the grain, pile it high in French bread with slices of cheddar and a light touch of mayo or even better, horseradish sauce. A little salt and pepper and gobble it down with a cold brew. Holly Molly it's good!!!!!!

Yep, an expensive cut of beef turns into brisket, once refrigerated, and must be treated like one. All the flavor is still there...you just have to compensate for the toughness and dryness that it takes on when refrigerated. I'll take all of the left-over rib eyes please - I've never actually seen such a thing at my house.

We found that a terrific use of leftover turkey is to TexMex it-- turkey tacos or turkey enchiladas. Oh wow how tasty! A wonderful mix of the rich flavor of a good smoked turkey with some TexMex spices.
No special recipes here, just a general suggestion to go the turkey-tex-mex route and improvise. Yum.
Let's not forget turkey salad. Anything you drown in mayo is bound to be good :cool2:

Since my stepdaughters have to work tomorrow and I really don't want them coming over... and I like to cook, I am making them a heat and eat Thanksgiving dinner that they can eat at their house. At the same time, I am hanging out with my 11 year old and showing her how to cook. So far she has made...
Yeast rolls
Green bean casserole (for us for tomorrow)
Green beans with bacon
Corn (from a can)
Cornbread dressing
Pecan rolls (for us tomorrow)
Baked beans
Sweet potato casserole
Mashed potatoes...
Then my mom made them a pumpkin pie and I will toss in a can of cranberry sauce.
We got a 7 pound roasting chicken in the oven, and when that comes out, I will show her how to make gravy as well.

My grandparents on my mother's side in JAX FLA used to like oyster dressing, I remember eating/trying some in the early 60s. A dish like that should be made separately because few enjoy oysters in turkey dressing.
I pretty much like and will stick with Mrs Chief's stuffing with more traditional ingredients like raisins and Granny Smith apples.
Don't fergit to remove the plastic bags from the turkey cavities....:tooth:
We just got a Butterball breast this year because it will be just the two of us. We had plans to go to our FLA house, as usual, and have kinfolk over, but some life events prompted us to change our plans.

Just finished slicing up the turkey and ham, setting up extra tables, etc. - waiting for early arrivals, now. I only got three hours sleep, on account of baby-sitting the smoker - long day ahead, but the meat is A-OK, Mrs. Bisley got a good scald on the dressing again this year, and most of the folks I could do without ain't coming. So, all is well. Let the over-indulging begin.
I made it as directed so I could blame Chris if it sucked. Cream, oysters and crackers sounds too simple to make and I thought it would taste like cream, oysters, and crackers at first thought. I was wrong. It cooked up with a nice brown crust on the outside and was moist on the inside. The cream, oyster broth, and crackers fuse into something that doesn't resemble any of them and becomes something on its own.
Warning-- It does make the whole house smell like oysters.
I liked it! Mrs. Jerm liked it. I will make this recipe again, but I will add some sauteed onions, celery, and a bit of pepper for my tastes next time.
