Korean Sloppy Joes

Made these the other night. They totally rock! I happened to find the Gochujang ( Brown rice red pepper paste, think Sriracha, but with more funk), at a local supermarket and decided to try this recipe out of a cookbook from the library. Otherwise normal ingredients. I will use ground turkey next time as the pork is fatty and has to be drained, but the bonus on that is the grease is awesome for eggs the next day.

Korean Sloppy Joes:

1 lb. ground pork
1" knob ginger, grated
6 garlic cloves, chopped
5 TBSP Gochugang
1 TBSP Sesame Oil
1 TBSP sugar
1 TBSP soy sauce
1/2 tsp. black pepper
1 TBSP Vegetable Oil
1 cup diced onions (we used 3 scallions) You can garnish with more.
Pickles for serving (optional)

1. In a large bowl, mix the pork, ginger, garlic, Gochujang, Sesame Oil, sugar soy sauce and black pepper. Marinate for 2 hours, preferably overnight in the fridge. (I used a gallon size freezer bag).

2. Heat a large cast iron skillet over heat with vegetable oil. When shimmering hot, saute the diced onions for 4 min. (I didn't do this part, I put the scallions in the marinade).

3. Add marinated pork and saute, stirring just until fully cooked through, roughly 5-7 min. Drain residual fat if needed (I drained, it was too much).

4. While the pork cooks toast the buns. (I put cooked pork in serving bowl and toasted the buns in the pork fat, which was very little).

5. Divide the meat and put on buns and serve with pickles.
