Amen Dude, what you're calling Swiss Steak sounds like what Southerners call Chicken Fried Steak. If you tenderize it and season it with a little salt, pepper, and garlic, it melts in your mouth. We are on the same page. And as far as big chunks of venison check out my post in answer to cpj's about being dry. I believe that. The northern deer I bet are better in that respect.
Swiss steak is where you take the pieces of meat, pound them with a tenderizer, dredge with flour/salt/pepper, then brown in oil. From there, you put them in a dutch oven or baking pan and add some stock plus tomatoes, onions, and mushrooms and toss it in the oven for a couple hours. What you get are these fork tender braised pieces of meat with a nice gravy. It is a nice comfort food. If you Google it, there are a ton of good recipes out there.
OK I stand corrected, but the first step of the process is the same as chicken fried steak. Come to think if it that sounds like what my mother used to call Swiss Steak. I prefer good chicken fried steak to it though but then again being from Texas does have its perks.

Well I agree with you as far as trying to cook ribs in the oven or BBQ 'em, but something about boiling them doesn't bring out the yuck. or maybe it drowns out the yuck. I discovered this when I was boiling them for my dogs. I got curious and tasted one. I ended up eating half the dog food. And that was without adding any seasoning. I tried seasoning them with garlic, onions, salt, and pepper later and everybody was eating them. Poor dogs.

And if you omit the tomatoes and add extra stock and some Worcestershire, you got Salisbury steak.

Oh yeah me too. And all joking aside, I would probably love your Swiss Steak. I just haven't had it since I was a kid. For instance I remember the first time I tried something curried, I hated it. Now I love curries. My tastes have changed a lot since then. When I was a kid I liked straight on simple food. Now I enjoy different tastes.
I've got to teach Annie to cook more American stuff. She is fantastic with Filipino cooking. She makes dynamite Adobo and Beef Calderetta. She makes an excellent chicken curry too and various soups and stews. She is really good at fry cooking although I did enlighten her on beer batter. She loves that. To me food is an adventure all its own. It just took me a while to get brave enough to venture out and try lots of stuff. However, I must admit, being unadventurous never caused me to miss too many meals.
