What’s Fer Dinner

Tonight was bone in ribeye, Brussels sprouts fried with bacon and a side of cottage cheese. Not bad for a work meal.

Not bad at all!  I coffeed my way through breakfast and lunch and looking at a light dinner with the wife later.  Didn't find the time to stop for a meal...

My wife roasts Brussel Sprouts (which I used to HATE) with bacon and maple syrup and they are AMAZING!!!

Yesterday was a one meal day. Brussel Sprouts and bacon is possibly one of the best sides in the world. I like to cook them a little bit longer than I did tonight, but I had to make due with what I had. When they open up and fry in that bacon grease.... Amazing.

My wife does the same.  She says the longer cook is what takes the bitterness out of them.  The Maple syrup was something I was REALLY doubtful about but DAMN it tastes good in this combination.

I think today I will start my dinner with a healthy glass of Scotch...  That should be good on an empty stomach  :D

These two have been my go-to. The McConnell's Whisky is incredible for the price. If you like Scotch, I'm sure you would love it!

NICE!!!  I've had the Tullamore and it was fantastic, I have to try the McConnell's.  Thanks for the recommendation!  I'm a big fan of anything Irish.

If you liked Tullamore, you will love McConnell's. It's just as smooth, and a little lighter. Not a complex profile by any means, but you get a hint of vanilla and smoke. I like them both neat.

Mini meatloaf from a couple of hamburger patties, and fried a chopped up baked tater in the cast iron skillet. Didn't feel like cooking; a few days after chemo everything tastes like stomped on fresh dog poop smells. I'll go back to cooking the good stuff Tuesday. :)

My wife brought home Lee's Chicken for supper. I never knew how good a box of chicken, mashed taters and gravy could taste.  That was the first food that wasn't cooked in out kitchen in about 10 days.

I made a pot roast. It's a love hate deal for the wife. She loves the roast but hates that I can just throw it all together without instructions and she cant follow a recipe to save her life lol.

Funny, my wife does an excellent pot-roast, but...... the two best I've ever had were cooked by a German niece-in-law and another by an ex-GF. Believe it or not, both were
boiled. Strange cooking method for a beef roast, but the results were excellent beyond belief.

My wife won't even try that method. Being Iowan, that doesn't follow the rules. Being Jewish, she hates anything German. Being my wife, she hates anything ex-GF'ish.

I'll settle for what I get, I guess, like an old Lab Retriever.

Jen picked up some bacon salmon patties at Publix, flash fried them, toasted the buns, little bit of mayo, they were great, first time i ever had a bacon salmon burger.

My wife ultimately fed me pizza.  Not bad but we both worked late so no elaborate meal for Friday night.  We did eat while we re-watched Jack Reacher.  That was a fun flick!

Now for tonight I have steaks in the refrigerator that I dry rubbed yesterday.  Gonna grill them around 6 and open a nice bottle of wine to go with them!
