Dry aging 19.1 lb prime rib roast

The first prime rib roast I did back in March/April came out fantastic after 39 days. This one will be in for 44 days. I'll pull it on 9/25 when my buddy comes into town for our Axis deer hunt on the 28th  

This time I was able to vacuum seal the dry age bag. I put multiple seals on it as folks say sometimes the first one comes undone.  This is about the largest road this 2' bag will hold and be able to seal properly.  I'll post picks about the halfway point and when it's done. Now i just need to hurry up and wait. 

Distance is not an issue, but the wind can make it interesting!
