This bobcat neat looks darker than what associate with “cat”.  The mountain lion I had was really mild tasting and delicate meat to cook, light pink in color more like veal.  

And like chicken it veal it went from raw, to perfection , to overcooked in seconds so you had to watch it in the pan like a hawk and take it off the heat the second it was right.

It was also delicious with just a little salt and garlic as seasonings.  Is bobcat strong distinctive tasting or one of those meats that taste like whatever you season it with?

Both times I’ve had it, it had a distinctive taste and texture. Better the second time as sausage.

Cat back straps are delicious. Very mild not at all what I was expecting.
