Cold weather foods....

I did a clone of Panera's Broccoli cheese soup. Very easy to do. Chopped up a pound broccoli, handful of carrots, onion, I added some celery as it was lying around. Add chicken stock and a block of cream cheese. Into the IP for 6 minutes. Quick release pressure. Stick blender to make it a bit more creamy.

Then add the shredded cheese and some half and half. A couple dashes of hot sauce and correct for salt and pepper. Done. 


Soups, stews, chili are my go to. My beefy refried bean soup is a regular in the rotation. Healthy and hearty. The trick it to find the stuff that is low or lower in carbs for me.

What say you? What are your go-to foods in the colder days?

    I switch up my work lunches from cold cuts to cream chicken sammiches.......

    Chili and vegedible soups go into rotation. More crock pot meals. Roasts w/ potatoes and carrots, swiss steak, beef and noodles.

    Lots of soups, stews and chili..
    .made in big enough batches that I don't have to cook every day...

    My creamy pumpkin soup is always a hit and often requested.  Basically boil chunks of pumpkin in stock until totally tender, then run through a blender until  completely smooth.  Re-heat, add a bit of heavy cream and maybe even some butter, the typical spices you’d use in pumpkin bread and a good dash of sherry!

    We made albondigas soup today also like chili, beef stew and chicken soup for cold weather.

    I like soups...

    Clam chowder

    Chicken/rice/vegi soup

    scratch soups

    Beef & Barley 

    Brazilian Black bean stew/soup...Feijoada.  

    Split Pea & Ham

    Ox Tail

    im sure im missing on some....

    I made a pot of "chili" last week. In quotes, due to the use of beans in it, making it kinda, sorta like chili..   :open_mouth:

    I had a partial pot of leftover pinto beans (another cold weather staple for me) and part of a pan of leftover fried potatoes and onions. Browned a pound of ground beef, combined with the beans and potatoes, a few big spoons full of pico de gallo and tossed in some store bought chili seasoning and let it simmer. 10 minutes of work, a couple hours simmering and I had food for a few days.. It's a good thing I live by myself, too... 

    On a related note, the Williams Tex-Mex style chili seasoning packet is actually pretty darn good for quick chili. One of the best, if not the best I've tried. And it's "no salt added," so it doesn't get too salty like some I've had. Got it at Walmart.

    I think tonight is going to be red chile chicken enchiladas with beans and rice. That'll get me through until Thursday..

    Got a Dave's Jalapeno corn bread. Wife cooked ground beef taco meat, added cheese and topped with the mix. Turned out like a tamale pie. The heat from the cornbread offset it's own sweetness. REALLY good.

    Gotta add the true BBQ star, the king of all low and slow- Brisket. 

    It's great year round, but I enjoy smoking in colder weather

    Mofongo is amazing but really, the slave inspired organ foods are sooooo freaking good and actually good for you since they are a source of lean protein!

    I have crock pot made red beans and rice a few times recently. I think it is becoming a staple. Chili and black bean soup with a meaty ham bone in it. Lasagna is a house favorite. Just put a pork loin marinated in Italian seasonings and garlic with a little olive oil in the oven.

    There's a thing popular in Kansas...Chicken and noodles served on a pile of mashed potatoes...also yard bird and dumplings...

    Another Kansas oddity is the combination of chili and cinnamon rolls...

    None of the above is on my menu anymore and I really hate that...

    Not as bad as the Cincinnati staple of chili with cinnamon on spaghetti.........  :s

    Yeah...it struck me as a bit weird...that being said...the local ladies out there bake a mean cinnamon roll...the "chili" on the other hand is somewhat questionable...it's basically hamburger and kidney bean soup...but the locals love it...

    Been too warm here for cold weather food lately. Been wanting to make a big pot of chile colorado. Eat some and freeze a bunch for easy meals later in the winter. But temps have been right around 70 degrees. Just not the same. Looks like it's supposed to finally cool down later this week and into the weekend. Maybe I can get a big pot going.

    I prefer sausage with/in my biscuits and gravy. I brown it like hamburger meat and mix it IN the homemade milk gravy. Plus, I like a touch of sugar in my coffee, helps sweeten my disposition ;)

    Breakfast is always in the rotation for dinner. This week we had pancakes and bacon; week before was sausage gravy, biscuits and eggs; before that was french toast and sausage links....

    Oh yeah, NOW we’re talking!  Both are winter favorites.  I make home made pea soup every time we have ham for dinner.  The ham bone becomes the stock for the soup.

    Two thick slices of ciabatta bread with a nice hunk of smoked ham and melted cheddar in between them.  That’s a meal!

    My Dad used to make the best split pea/ham soup. And I am always down with a grilled ham & cheese.
