Simple salmon egg cures?

CaliFFLCaliFFL Posts: 5,486 Senior Member
Did a bit of silver salmon fishing on the WA coast over the last few days. Caught a few females and I have about 5 lbs of roe. I don't want to throw it away but I don't want to put too much effort into curing the eggs. I've never cured eggs before and there is a lot of recipes online.

Suggestions?

Smoke the roe whole, while still warm spread it on fresh bread or whole grain toast..................eat with a chilled glass of Chardonnay to wash it down with.

Give thanks at how lucky it is to be you.

Thanks, but I was thinking about curing the eggs for future salmon bait. I watched a couple guys pull out home cured "egg balls" and they limited out in the first hour.

Nice...I am looking to get into the last run of silvers here this weekend...

Back home we fry the row we get from Mullet. I have no idea what to do with salmon roe. I will ask a few of the old timers at work tomorrow....

We used to dust it with borax up here in MI.

The way I remember doing it was to mix Brown Sugar and Borax with a little coloring, like coolaid or dyed anise oil. I don't remember the proportions at all but it was a little sugar to a lot of borax and enough color to get the color you want. All in a gallon jar with water to top it off. let it sit a few days and then you can either use them or let them air dry a little for a firmer texture. Cut them into bait size balls and "back bounce" them down the river killer for all kinds of salmon and steelhead.

On a side note the guy I use to fish salmon with every year the first hen you caught you had to eat some eggs out of. Like we cleaned the fish hosed off the eggs then you ate them.

Get a hundred river rats together and you'll get a hundred different variations of egg cures. Plain ol' Borax will work fine or maybe one of the prepared cures would be better to get started. Pro-Cure is ok or Pautzke's Fire Cure. Just follow the directions on the label. Just a hint though, if it's a cure with color added, wear rubber gloves or you will have funny looking finger nails for a few days.
