Got the sweet tooth in overdrive tonight!

When I get a craving for something sweet, sticky, and totally off the diet, I choose home-made peanut brittle. It takes about 10 minutes of microwave time, and about the same time to cool down enough to eat. Good stuff! Try it sometime!

1 1/2 cups raw peanuts
1 cup granulated sugar
1/2 cup light corn syrup (Karo, etc.)
1 teaspoon vanilla extract
I tablespoon butter or margarine
1 1/2 teaspoons baking soda

Line a cookie sheet with aluminum foil and spray it with non-stick spray. I use butter-flavored Wal Mart spray oil.
Use a glass or Pyrex 2-quart dish that will stand high heat in the microwave.
Spread the peanuts in the bottom of the dish. Add granulated sugar. Mix well.
Pour the syrup over the sugar/peanut mix and microwave on High for 3 minutes.
Remove the dish, stir in the butter, and microwave another 3 minutes on High. Wear oven mitts- - - -the dish will be HOT!
Remove dish and stir in the vanilla. Microwave on High 2 minutes.
Remove dish from microwave and stir in baking soda quickly. The mix will foam up violently. Quickly spread the mix onto the foil lined cookie sheet and cool for 10 minutes. When well-cooled, break the cake up into bite sized pieces. Enjoy!

    I love peanut brittle but it makes my teeth hurt now.
    On the bright side, I'm gonna make some butter pecan fudge tomorrow.

    Quick cinnamon roll recipe:

    Makes 16 cinnamon rolls

    Two cans of Pillsbury Grands crescent rolls(8 crescent rolls per can)


    1/2 cup granulated sugar

    2 teaspoons ground cinnamon

    1/4 cup butter or margarine (1/2 stick), room temperature

    1/2 cup raisins, if desired

    1/4 cup finely chopped nuts, if desired


    1 cup powdered sugar

    1 tablespoon butter or margarine, room temperature

    1/2 teaspoon vanilla

    1 to 2 tablespoons milk

    Open the cans of crescent rolls, and carefully roll them out as two sheets of dough; don't separate yet.

    Mix the filling and evenly sprinkle on the sheets of dough.

    Separate rolls and roll them up and place on two 9"x13" baking sheets either sprayed with baking spray, or lightly buttered(my favorite), or covered with parchment paper.

    Place in preheated oven and bake per instructions on can.

    While they are baking mix up the glaze. When rolls are baked bunch them together on the baking sheet and drizzle with glaze.

    My grandmother used to make peanut brittle, and it was great. But one time she got the recipe mixed up (did the math wrong trying to make a bigger batch, I guess) and added too much Karo or whatever kind of syrup she used. Instead of peanut brittle, it was peanut chewy, and it would yank your fillings out. I loved it, but one little bite would take 10 minutes to eat because I had to be so careful chewing.

    Teach, that's a little different than the last recipe that you posted but I'd guess that it works out the same. I'll bet Debbie and I have used your last brittle recipe at least 20 to 30 times and we've made it with sunflower seeds, peanuts, (dry roasted seems to have more flavor), almonds, pecans, and macadamia nuts. The macadamia flavored has been our favorite. We plan on making some big batches to include in the Christmas baskets that we give as gifts.

    The raw peanuts need a little more nuke time than the dry roasted type. Every microwave is a little different, also, so a little adjusting of time might be required. The peanuts need to be crunchy, not burned, and the sugar/syrup/peanut mix needs to blend into a bubbly thick liquid before the soda is added to make it foam up.
